Roasted Potatoes with Gorgonzola Dressing

This is a great side dish with lamb, pork and beef.  I fixed a grilled leg of lamb and I had this on the side.  This is the ugliest looking salad I have ever seen but the flavor was bold and lovely.  I used Gorgonzola which is an Italian Blue cheese.  It is buttery and a bit salty with a bite from the “veining”.  Gorgonzola is rather hard to find.  You can substitute this with any kind of Blue Cheese. 


2 pounds red potatoes, cut into quarters

Gorgonzola Dressing

1/2 cup mayonnaise

1/4 cup sour cream

1 tsp prepared horseradish

white pepper to taste

1 container (5 oz) Gorgonzola cheese


Boil potatoes until it is fork tender.  Strain and put potatoes back in the pot to allow it dry.

Prepare dressing.  In a small bowl, combine mayonnaise, sour cream, horseradish pepper and Gorgonzola cheese.  Mix well.  Cover and refrigerate.

Grill or bake potatoes until they are slightly brown.

Cool the potatoes and combine it with the Gorgonzola Dressing.
